Thankful Thursday: Figs

I am thankful to see small green figs on our Fig Trees. It will take about a month for them to get ripe, and then, pick and eat fresh from the tree!

Thankful Thursday

I am thankful that my pantry shelves were full - no need to rush to the grocery store before the winter storm.
I am thankful we had more propane added to our tank last week - no worry about not being warm enough.
I am thankful that the electric power stayed on - the snow and sleet did not cause trees to fall on the lines.
I am thankful that I have 10 books checked out from the library, and thankful for the extra time to read!

I am thankful to have another birthday! And I am thankful for my dear sweet husband who took me to Red Lobster Restaurant to celebrate! I had grilled Trout, a baked Potato, steamed Broccoli, and three Cheddar Bay Biscuits. It was delicious, and I ate so much I had to wait until the next day to have birthday cake and ice cream!

Friday's Fave Five, October 1, 2021

October is my favorite month of the year! The Summer's heat is gone, and Winter is not here yet. 
I especially like this calendar from Blue Letter Bible. Each month has a nice photo, a Bible Verse, and at the bottom of the page, a brief devotional on the scripture.
"For the Word of God is living and active and sharper than any two-edged sword, and piercing as far as the division of soul and spirit, of both joints and marrow, and able to judge the thoughts and intentions of the heart." Hebrews 4:12

2. Book Club
Our book club selection for October is 'Heart and Soul' by Maeve Binchy. Last month we read 'At Home in Mitford' by Jan Karon.

3. Senior Citizen's Bingo
I'm a winner! About a dozen of us older folks get together once or twice a month to play Bingo just for fun and fellowship. We moved the tables farther apart, and we all wear masks. There is no charge to play, but those who want to can donate small prizes. On Wednesday I won a box of cheese crackers! They are very thin and crispy - a tasty snack.

4. Fresh Fruit
They say "An apple a day keeps the doctor away!" but I prefer oranges.

5. Living with Diabetes
I am especially thankful for food made especially to help us diabetics control our blood sugar! I pour chocolate Boost on my morning cereal instead of milk.

Our figs are getting ripe!

Something, probably a rabbit, has been eating those close to the ground. Or it might have been our dog!

We pick only as much as we can eat in a couple of days because figs are fragile and do not keep well. They can be cooked and made into fig preserves, but we prefer to eat them fresh.

Garden Bloggers' Bloom Day, October 2020

There are still a few blooms on the Turk's Cap, aka Sleeping Hibiscus

'Iceberg' Rose

These Asters were a gift from a friend last year.

The Phlox are almost finished. But they will be blooming again next Summer.

My Butterfly Bush is still blooming.

My Encore Azalea 'Autumn Royalty' is the prettiest I have ever seen it! Eight years ago it was a nice little potted plant. Now it is taller than I am.

Unless we have an early frost, the buds on my 'Confederate Rose' Hibiscus will have time to open.

The peppers are still blooming in the vegetable garden.

They produce small mild peppers, similar in taste to bell peppers. They are sweetest if left on the plants to ripen to a deep orange color, but I usually pick a variety of colors.

Harvest Monday, Our World Tuesday, and All Seasons

First I need to say I do not know the name of these peppers. A friend, who did not know what they were, gave the plants to me at the end of May. They bloomed very well, but were slow to develop peppers. It was only a couple of weeks ago that we began to get a harvest.

They are mild like a bell pepper. These will go into the large green salad we are having for lunch today.

I am thankful for home-grown cucumbers, and...

... an easy refrigerator pickle recipe!

Sweet Refrigerator Pickles

5 cups thin-sliced cucumbers
2 cups thin-sliced onion (I use Sweet Vidalia Onions)
1  and 1/2 cups apple cider vinegar
1 and 1/2 cups sugar
1/2 teaspoon salt
1/2 teaspoon ground cloves
1/2 teaspoon ground turmeric
1/2 teaspoon celery seed
1/2 teaspoon mustard seed

Mix cucumbers and onions together in a large glass bowl. Mix vinegar, sugar, salt and the spices together in a pan and bring to a boil, stirring to dissolve sugar. Pour hot liquid over cucumbers and onions. I put a small plate on top and press down so the cucumber/onion mixture is submerged. Allow to cool slightly, and then spoon into jars (use a wide-mouth funnel). Cover with tight fitting lids. Allow to cool a bit more, then put in refrigerator. Wait 3 days for the flavors to mix well before tasting them. Keep refrigerated; makes 3 pints.

It is Tomato Sandwich Season again! My 'Better Boy' tomatoes are beginning to ripen. An excellent slicing tomato, the 'Better Boy' is one of the most popular tomato varieties grown here in the United States.

I am thankful that our community center has re-opened, and our Senior Citizens Bingo Group was able to meet on Wednesday! We all wore masks and moved the tables farther apart so we did not sit too close together. And I won a game, receiving peanut butter snacks as my prize!

Thankful Thursday and Little Things Thursday

I am thankful for fresh blueberries! We went to my husband's cousin's house Saturday to help her pick her blueberries. They are delicious on cereal, and...

... I made a blueberry tart. One pie crust, 1/2 cup sugar, 2 tablespoons flour, dash of nutmeg, 3 cups of blueberries. Mix dry ingredients together, stir in blueberries. Pour into pie crust, fold edges up around fruit mixture. Sprinkle a teaspoon of sugar on crust (optional). Bake at 350 F for 30 minutes. Enjoy!

I packed the rest of the blueberries in my freezer, three cups to a bag, for future blueberry tarts!

Thankful Thursday and Little Things Thursday

I am thankful for homemade Cappuccino Mix!

I have had this recipe for years, and do not remember where I found it. But I have seen similar recipes on the Internet that use more instant coffee granules (3/4 cup instead of 2/3 cup), so if you want a stronger coffee flavor use the larger amount.

Cappuccino Mix
1 cup powdered non-dairy coffee creamer
1 cup instant hot cocoa mix
2/3 cup instant coffee granules
1/2 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Mix all ingredients together. Makes one and a half pints. Store in an airtight container. Use 3 or 4 spoonsful (or more) per coffee cup of hot water. Number of servings will depend on the size of your coffee cup!
