Our World TuesdayAll Seasons, and My Corner of the World

Here in the southeastern United States, after a hot Summer, we are beginning to get cooler weather, especially in the mornings. And naturally, cooler weather means it is time to start thinking about soups! 

Lea's Vegetable Soup

Potatoes, as many or as few as you want, peeled and cut into bite-sized pieces

One large Carrot or several smaller ones, cut into bite-sized pieces

One Sweet Yellow Onion, peeled and sliced

One clove of Garlic, peeled and cut into tiny pieces

Olive oil for sautéing the onion and garlic

One can of Beans, undrained (I like the dark red kidney beans to give more color to the soup)

One can of Fire-roasted Whole Kernel Corn, undrained (Del Monte)

One Chicken Bouillon Cube with Herbs and Spices (Wyler's)

One packet or cube of Ham Flavoring (Goya is the brand I like, but whatever you have will be good)

Directions

Put cut up potatoes and carrots in a soup pot. Add enough water to cover. Add cans of beans and corn with their liquid, and turn heat to medium-high. While waiting for the soup to boil, sauté the onion in olive oil. When the soup is boiling, add the garlic to the onion and sauté for one minute more. Add onions and garlic, and any oil in the skillet, to the soup. Add the chicken bouillon cube and ham flavoring. Stir well, turn heat down to a low boil, and cook until potatoes and carrots are tender.


I like the soup just the way it is, but my husband adds fresh-ground black pepper. Enjoy!

I am thankful for home-grown cucumbers, and...

... an easy refrigerator pickle recipe!

Sweet Refrigerator Pickles

5 cups thin-sliced cucumbers
2 cups thin-sliced onion (I use Sweet Vidalia Onions)
1  and 1/2 cups apple cider vinegar
1 and 1/2 cups sugar
1/2 teaspoon salt
1/2 teaspoon ground cloves
1/2 teaspoon ground turmeric
1/2 teaspoon celery seed
1/2 teaspoon mustard seed

Mix cucumbers and onions together in a large glass bowl. Mix vinegar, sugar, salt and the spices together in a pan and bring to a boil, stirring to dissolve sugar. Pour hot liquid over cucumbers and onions. I put a small plate on top and press down so the cucumber/onion mixture is submerged. Allow to cool slightly, and then spoon into jars (use a wide-mouth funnel). Cover with tight fitting lids. Allow to cool a bit more, then put in refrigerator. Wait 3 days for the flavors to mix well before tasting them. Keep refrigerated; makes 3 pints.

Thankful Thursday and Little Things Thursday

I am thankful for fresh blueberries! We went to my husband's cousin's house Saturday to help her pick her blueberries. They are delicious on cereal, and...

... I made a blueberry tart. One pie crust, 1/2 cup sugar, 2 tablespoons flour, dash of nutmeg, 3 cups of blueberries. Mix dry ingredients together, stir in blueberries. Pour into pie crust, fold edges up around fruit mixture. Sprinkle a teaspoon of sugar on crust (optional). Bake at 350 F for 30 minutes. Enjoy!

I packed the rest of the blueberries in my freezer, three cups to a bag, for future blueberry tarts!

I am thankful for homemade Cappuccino Mix!

I have had this recipe for years, and do not remember where I found it. But I have seen similar recipes on the Internet that use more instant coffee granules (3/4 cup instead of 2/3 cup), so if you want a stronger coffee flavor use the larger amount.

Cappuccino Mix
1 cup powdered non-dairy coffee creamer
1 cup instant hot cocoa mix
2/3 cup instant coffee granules
1/2 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Mix all ingredients together. Makes one and a half pints. Store in an airtight container. Use 3 or 4 spoonsful (or more) per coffee cup of hot water. Number of servings will depend on the size of your coffee cup!

A Garden Experiment, June 1, 2020

Harvest Monday and All Seasons

My brother gave me this Potato Planter for Christmas. Basically, it is just a sturdy plastic bag with a Velcro flap on the side. I bought 'Red Norland' seed potatoes.

On March 5, I planted 4 seed potatoes in the bag. As the plants grew, I added more soil until the bag was full. We have had plenty of rain this Spring, so no additional care was needed.

The tops of the potato plants began to die about a week ago, so on Saturday the moment of truth arrived.
I opened the Velcro flap, removed some soil, and...

… there they were - Potatoes!

Big ones, little ones, and all sizes in-between!

After brushing off the dirt and adjusting the scale for the weight of the glass plate: 2 lbs. 4oz. (1 kg.) of potatoes with hardly any effort at all on my part!

Here is the recipe I used to cook a few of them, though for just the two of us, I reduced the pan size and ingredient amounts. They were delicious!

I am not physically able to grow a large garden; this Potato Planter bag was easy and fun.
I have more potatoes in a large flower pot that will be ready soon. Wish it had a side flap to open!
Also in containers, I have tomato plants, pepper plants, and cucumber vines.

I am thankful for my small (2 quart) Crock-Pot! It is just the right size if you are cooking for two or three.
Beef Stew for supper tonight!

Imperfections in these glass doors reflected this completely level road as if it were a rollercoaster!

3. My Vegetable Garden

I was successful in growing 'Burpless Beauty' Cucumbers last year, averaging nine cucumbers per vine. We ate them in green salads, made pickles, and gave the extra ones to friends. I hope to have a good crop again this year.

On Monday I planted six seeds in this extra-large plastic tub, and made a trellis for them out of hog-wire and bamboo cane poles. I plan to plant another tub a short distance away and extend the support system between the two groups.

I found this recipe for Refrigerator Pickles on the Taste of Home website. But I used five cups of sliced cucumbers instead of six. Makes enough pickles to fill 3 pint jars. Let them sit in the refrigerator for a few days before opening them. Delicious!

Spiny Softshell Turtles, Apalone spinifera, are fresh-water North American turtles that may grow to have a shell length of 21 inches (54 cm). With their head and legs extended, they look much bigger!

I live far inland so seeing a shorebird like this migrating Solitary Sandpiper, Tringa solitaria, is a real treat!

I have a different kind of sky photo for you today - a Spiny-backed Orb Weaver in bright morning sunlight!

Phlox is a plant genus of 67 species found mostly in North America. I think this is a Phlox panticulata that is also known as Garden Phlox. It attracts bees and butterflies, and it is also a popular food for deer, rabbits, and groundhogs.

3. Good Food!

I love apples eaten as fresh fruit or cooked in a pie! These are 'Ginger Gold.'

For the Apple Tart: 3 cups peeled sliced apples, 1/2 cup sugar, 2 tablespoons flour, 2 or 3 generous dashes of cinnamon, 1 pie crust. Mix flour, sugar, cinnamon, and then stir in apples. Fill crust and fold up the edges, leaving the center open. Sprinkle crust lightly with sugar (optional). Bake at 350F for 25 to 30 minutes.

5. A New Bird For Me! (I'd Rather B Birdin')

Broad-winged Hawks, Buteo platypterus, are small hawks that breed in the eastern half of North America, and then migrate to the Central American countries to spend the Winter months. They eat small mammals, amphibians, and insects.

When I saw this one on the power line up the road from my house, I was not sure what it was. I am glad I turned the car around and went back for a second look. This is why I always have my camera with me!

Camp Bluebird, April 29, 2019

I spent the weekend at Camp Bluebird for Cancer Survivors at the Fellowship Christian Retreat at Crow's Neck on Bay Springs Lake.

The theme for this year's camp was the Olympic Games. We played our own version of the Olympics using paper plates for the Discus Throw, and foam 'pool noodles' for the Javelin Toss. But the most fun was the Ring Toss - throwing a foam-rubber ring over your partner's head and shoulders while they stood still with their hands at their sides. If your ring went astray and landed on someone else, it was a point against you!

We stayed in cabins at the north end of Bay Springs Lake. The lake is part of the Tennessee-Tombigbee Waterway - the main body of the lake is much wider than this.

Just one of the many activities of the fun-filled weekend was building Bluebird houses. Each camper made one to carry home with them.


For our craft session, we made recipe card holders. There was a wide range of paper designs to choose from. We glued them to ceramic tiles and sealed them with the kind of sealer used for jig-saw puzzles when you want to frame them. I got this recipe from Taste of Home magazine.

A clothes pin glued on the back gives it legs to stand upright, and a smaller clothes pin at the top holds the recipe card.

There was a raffle to help raise money for next year's camp. I considered the $15 I spent on raffle tickets to be a donation, but I won these pretty boxes!

We were served Friday night supper, three meals on Saturday, and Sunday morning breakfast, and between meals there were plenty of snacks available.

We started our days with a nature walk and ended with a campfire. It was a wonderful time for cancer survivors to relax, have fun, and celebrate life!

Blueberry Tart, July 12, 2018

Today I am thankful for a Quick and Easy Fruit Tart recipe!

Ingredients:
One pie crust - I use the refrigerated kind that you unroll, but I am sure homemade is better.
1/2 cup sugar
2 tablespoons flour
3 cups of fruit
An addition teaspoon of sugar

Preheat oven to 350F.

If you are using a refrigerated crust, follow package directions. A rolled up crust needs 15 minutes at room temperature before you unroll it.

Place pie crust in a pie plate - do not trim edges. Mix together 1/2 cup sugar and 2 tablespoons of flour. Gently stir fruit into the flour/sugar mixture until the pieces are well coated. Pour fruit into middle of pie crust, dusting any excess flour/sugar mixture in on top of the fruit.  Bring the edges of the pie crust up over the fruit and fold them over, leaving the center open. We are not looking for perfect folds here, the rustic look is fine. Sprinkle the additional teaspoon of sugar over the crust. Bake at 350F for 25 or 30 minutes, until crust is lightly browned.

On dark fruit (blueberry, blackberry) you may see some of the flour/sugar mixture still on the top of the fruit when the tart comes out of the oven. Just take a spoon and carefully stir it under the hot fruit.

I have made this Fruit Tart using different kinds of fresh or frozen fruit (thawed in the refrigerator) with good results. Ice cream or whipped cream makes an excellent topping. Large fruit (apples, pears) should be thin sliced, and I add cinnamon to the dry ingredients if making an Apple Tart.

Peach Tart Recipe, September 12, 2017

The peach tart was over half gone before I thought to make a photo!

Quick Peach Tart

1 pie crust
1/2 cup sugar
2 Tablespoons flour
3 cups peeled and thinly sliced peaches
An addition teaspoon of sugar

Preheat oven to 350F. If you use a store-bought pie crust, follow the package directions.
Mix together sugar and flour in a large bowl. Add the peaches and stir gently until peaches
are coated. Pour them into the pie crust. Bring the edges of the crust up and fold them over
the peach mixture, leaving the center open. Sprinkle one teaspoon of sugar over the crust.
Bake at 350F for about 30 minutes or until crust is lightly browned.

This recipe works well with other fruits, too. I have made it using apples, pears, blackberries, and blueberries.

Quick Pear Tart
This my adaptation of a recipe I found on the Taste of Home Recipes website.

Quick Pear Tart

1 Store-bought un-cooked refrigerated pie crust
1/2 Cup sugar plus an additional teaspoon of sugar
2 Tablespoons flour
3 Cups peeled and sliced pears
2 Tablespoons sliced almonds
Honey or maple syrup, optional

Place pie crust in a 9 inch pie pan
Mix together the 1/2 cup sugar and the flour
Add sliced pears and stir to coat well
Place pear mixture in pie crust
Fold edges of pie crust up over the pears, leaving the center open
Sprinkle with the additional teaspoon of sugar
Bake at 400F for 25 to 30 minutes or until pastry is lightly browned
Sprinkle with sliced almonds and return to oven for 5 more minutes
Cool on wire rack. Can be served warm or cold.
Optional: Drizzle each serving with honey or maple syrup
