Quick Peach Tart
1 pie crust
1/2 cup sugar
2 Tablespoons flour
3 cups peeled and thinly sliced peaches
An addition teaspoon of sugar
Preheat oven to 350F. If you use a store-bought pie crust, follow the package directions.
Mix together sugar and flour in a large bowl. Add the peaches and stir gently until peaches
are coated. Pour them into the pie crust. Bring the edges of the crust up and fold them over
the peach mixture, leaving the center open. Sprinkle one teaspoon of sugar over the crust.
Bake at 350F for about 30 minutes or until crust is lightly browned.
This recipe works well with other fruits, too. I have made it using apples, pears, blackberries, and blueberries.
